The temperatures are dropping and winter may be around the corner, but we are enjoying the first harvest from our new vegetable garden.
We enjoyed growing vegetables so much in our first vegetable garden, that I decided that I really wanted another vegetable garden to be able to grow even more vegetables. That way, we could grow enough to be able to store vegetables and eat them in the colder months.
Our new garden grew quickly and we enjoyed fresh tomatoes, green beans, corn, cucumbers, garlic and herbs.
Now, it is too cold to grow these warm-season vegetables – but we are still enjoying them…
We froze tomatoes and green beans so that we would be able to eat them during the winter months.
I have been able to make a delicious spaghetti sauce with our tomatoes.
I absolutely love green beans and so do my kids.
Garlic is so easy to grow and it lasts a long time after harvesting.
I have a bowl full of garlic heads that I store in a dark place. I hope that I have enough to last me until next May when I harvest my next crop of garlic
It was definitely worth drying some of our fresh-grown basil, thyme and sage this summer. I use them often to flavor soups and sauces.
*A small glass jar full of your favorite dried herb makes a great gift.
We still have some fresh herbs growing in the garden (it’s been a very warm fall).
Our fresh thyme and sage came in handy when my son and I prepared herb butter for our Thanksgiving turkey.
