I enjoy growing corn in my garden every summer…..
But even better – I love to eat it! If you don’t grow your own, you can find it this time of year just about everywhere – the grocery store, roadside stands fresh off the farm.

What I don’t like about fresh corn on the cob, is shucking the corn and boiling it in a large pot of water.
So, I was thrilled to find a new way to prepare it, which has 2 steps, is ridiculously easy and makes corn taste even better then when cooked the old-fashioned way.
Here is how you do it:

1. Place your corn into a preheated 350 degree oven. No need for a pan – just put them on the oven rack.

2. Cook for 30 minutes and then remove from the oven.

That’s it….it’s done!
The corn husk will keep the corn warm until your guests are ready to eat. The husk and corn silk peel easily away and the husk makes a great ‘handle’ for your corn. Top with butter and salt or your favorite topping. The corn has a great ‘roasted’ flavor. I guarantee you, you’ll never go back to boiling corn in a pot again
So this Fourth of July, enjoy great BBQ, homemade ice-cream and delicious sweet corn!

Does the corn need to be soaked in water before cooking?
That takes too long…
You put an ear of corn in the micro..5 mins for EACH ear! Corn husk and all..no wetting..2 ears is 10 mins.etc…when its done..you cut the end peice of the corn AND HUSK with a sharp knife. I use a potholder as its hot!! After cutting and throwing that end out..go to the other end and the crorn will fall out..no silk at all and ready to eat..in 5 mins..ITS AWESOME!!!! Not hot ovens in the hot summer..5 mins in the micro..each ear I put 4 ears of corn in for 20 mins!. The house does NOT get heated in the summer heat!!!
Gail, yes, this is exactly how I do it. I just learned this tip recently. I do it for 4 minutes for 1 ear and 8 minutes for two, and it turns out perfectly also (it depends on your particular microwave). I was so amazed at the ease of this method. You don’t have to turn the oven on in this heat (we had almost 100 degrees yesterday), and you don’t waste the gas either, AND it’s faster and easier! So, AZ plant lady, you should really be thrilled after seeing Gail’s post!

Amen to the microwave. Wonderful way to have COC without heating water or grill.
We have tried the microwave way too – left silk all over the microwave and the corn seemed kind of “rubbery”.
I, too, just learned to cut the end and microwave Pam you may have to adjust your time so you don’t overcook it..I love that it takes all the silk away with the husk..especially good if you only need to cook a few..for more corn the oven idea is great thinking could use same concept to remove the silk worth a try.
